Celebrate Egyptian Culture with Toshtar Macaroni

With Egypt’s presidential voting underway, it would be a good time to talk to your kids about Egyptian culture. Here’s a simple recipe, adapted from the book “Flavors of Egypt” by Susan Torgersen, that the kids should like. – Egyptian culture!

Toshtar Macaroni

1 lb. macaroni
1/2 c. olive oil
4 tomatoes, chopped
1 lb. feta or other white chesse, cubed
1/4 c. tomato paste, dilted with 2 c. water
salt, pepper, thyme
Boil the macaroni until tender but not too soft. Drain and rinse.
Heat oil in the same pot. Saute tomatoes until the tomatoes have wilted. Add cheese and stir until blended. Add salt, pepper, thyme and the diluted tomato paste. Boil 5 minutes. Add the cooked macaroni and cook on low until the sauce is absorbed and the macaroni is soft, stirring frequently.
